Chunk Salad

1 tomato, chopped
1 c. cauliflower, chopped
1 c. broccoli, chopped
1 cucumber, sliced
1 zucchini, sliced
1 carrot, sliced
1 onion, sliced into rings (purple onion is nice)
1/2 c. black olives
1/2 c. olive oil
3 T. lemon juice
1 t. oregano
1/2 t. sea salt
lettuce leaves

Toss vegetables in a bowl. Shake remaining ingredients in a container with a lid and pour
over vegetables.
