Couscous
Tacos
1 14 1/2-oz can tomatoes, Mexican style (spiced)
stewed
1 c. water
1/4 c. onion, chopped
1/2 pkg. Taco seasoning
2/3 c. couscous
1 1/2 c. lettuce
salsa
taco shells
In a medium saucepan combine un-drained
stewed tomatoes, water, onion, and taco seasoning mix. Bring to
a boil. Stir in couscous. Cover; remove from heat. Let stand for
5 minutes Spoon couscous mixture into shells. Top with lettuce.
