Quinoa Salad
2 c. quinoa (or any grain)
2/3 c. peas
2/3 c. chopped green peppers
1-2 garlic cloves
1 bunch green onions
1 diced tomato
2 chopped celery stalks
1/2 c. corn
1/2-1 c. Italian dressing
Prepare quinoa. It may be cooked, soaked overnight,
or sprouted (shown here sprouted). If cooking, stop two minutes
before the recommended cooking time. Mix quinoa and dressing. Add
the rest of the ingredients. Chill.
